Bibbiano Wine of Castellina in Chianti

Bibbiano Chianti Classico – also known as “black label” – is the result of a careful selection of grapes from all the vineyards of our estate, from both the south-west and north-east slopes.

The grape harvest for this wine generally begins in the second half of September; maceration and fermentation, in cement tanks, lasts about twenty days. A further stage of maturation is still in cement vats, followed by a further period of refining in bottles.

The color of the wine is a brilliant ruby red. It is intensely scented with a fruity note of blackberries and plums. The mouthfeel is rather intense; nonetheless this wine is easy to drink, thanks to a pleasant acidity that makes it fresh and lively.

Chianti Classico Montornello is obtained from Sangiovese grapes, grown on the slope of the estate called Montornello, a platform of loose soil with medium consistency.

Grapes are harvested by hand and wine-making begins in the second half of September. Fermentation takes place with their peels for about twenty days at a controlled temperature, before ageing for a period of about twelve months in French oak barriques. This is followed by further refining in bottles.

Montornello has a particularly intense ruby red color, with purplish notes. Its scent is mentholated with fruity aromas, while its mouthfeel is full, mellow and very elegant, with well balanced tannins.

The vineyard called “del Capannino” consists solely of Tuscan Sangiovese Grosso grapes. It has the best exposure and microclimate of the estate, on a soil rich of Alberese rocks. By tradition, for over a fourth of a century, this vineyard represents the best expression of our “genius loci”, the spirit of the place.

After fermentation and maceration for thirty days at a controlled temperature, the next maturation phase takes place partly in French oak tonneaux and partly in Slavonian oak barrels for about twenty-four months. This phase is followed by about six additional months of refining in bottles.

Chianti Classico Gran Selezione Vigna del Capannino and the idea of using only Sangiovese Grosso grapes started at the end of the eighties and from then on it has been bottled as Riserva until 2008 and as Gran Selezione from 2010. Going back in time, the years 2005, 2004, 2003, 2001, 1999, 1997, 1996, 1995, 1993 and 1990.

Chianti Classico Gran Selezione Vigna del Capannino is a full ruby red color wine. Its scent is extensive and complex. It is well structured, round and very persistent with tones of minerals, ripened fruit, and slightly balsamic.

From the kegs of a true “family reserve” we create the few precious bottles of Vin Santo, dedicated to Saint Lawrence, the patron saint of the Bibbiano Chapel.

Once from our Malvasia and Trebbiano grapes, today from our Sangiovese grapes, after several years of maturation, we develop a special wine with a rich aroma and scents of dried apricot, peach and almond. It is a fine round wine, fully bodied and elegant, that blends perfectly with fois gras, pâté and aged cheese.
