Tasting Selections:
Made from a very special grape variety, ALEXANDRIA MUSCATEL, whose selection, degree of ageing and painstakingly controlled fermentation, all enable its freshness, aroma and taste to be preserved much like a succulent delight, which, when tasted, leaves an unforgettable memory on the palate.
Elaboration: Light crushing of de-stemmed grapes, fermented in small-capacity stainless steel tanks at controlled temperature following film maceration.
100% Muscat of Alejandría.
Color: Very pale, crystalline, bright.
Nose: Powerful, fine and elegant, fully expressing the Muscatel variety, with overtones of musk, tropical citrus fruits and hints of fresh aromatic herbs.
Palate: Ample, very smooth and dry. Balanced, savory, rich in fruity overtones, with an outstanding grape variety aroma at the back of the nose, making it a highly recognizable, superlative, unique wine.
Match perfectly well with seafood, fish, rice, pastas and sushi. Ideal as an aperitif.

PRIMARY FERMENTATION: fermentation without the skins for about 3 days in stainless steel tanks at a thermostatically controlled temperature of 18°C max/64.4°F.
SECONDARY FERMENTATION: Charmat method in autoclave for 1 month
ALCOHOL CONTENT: 11 % vol.
TOTAL ACIDITY: 5.7 g/L
TASTING NOTES: pale straw yellow color, delicate fruity nose, fresh and persistent on the palate.
SERVING TEMPERATURE: 6-8° C/42.8-46.4° F
SERVING SUGGESTIONS: ideal as an aperitif, it pairs well with most dishes throughout the meal, particularly with light fish courses.

HISTORY
Our main goal is to produce wines with an extreme personality in an area where we think that it is very unique to grow grapes and make very interesting wines.
The project was born in 2009 with the vision of producing great wines in a remote and surprising region. Several varieties are very well adapted to the climate, the soils and the altitude of this region of Spain, making it possible to produce wines with character and a definite sense of place.
PADULES- THE REGION OF IGP RIBERA DEL ANDARAX
Padules, is the village where Pagos de Indalia is located, it is nestled on the Andarax creek between Sierra Nevada and Sierra Gador. This landscape, with big ravines and big slopes, forces us to use mules in many of our vineyards where you cannot use machines and you have to travel back to the old times to take care of the grapes.
The vineyards are calcareous in the area of the Andarax creek and amazing slate soils closer to Sierra Nevada, in the highest vineyards, where elevations top 3300 feet over sea level.

Our philosophy is to preserve the environment of the region. All the vineyards that we own are certified by the government of Andalucia with the stamp of organic agriculture.
VARIETAL: 50% Syrah / 50% Temp. The Syrah has been very well adapted to the calcareous soils that we have around Padules. The Tempranillo
Is in the highest altitudes and grown in very dry soils. Those vines are alive just with the humidity of the Alborán sea mist. This particular microclimate combined with the slate soils and with a huge difference in temperature between day/night, allows us to produce wines with a mineral character that are very age worthy. We produced this wine in collaboration with Gretchen Thomas, Barcelona’s Corporate Director of Beverage. Please Enjoy!
Intense ruby red color with purple reflections.
On the nose, red fruit, particularly raspberry and strawberry).
On the palate, fresh and very fine tannins that give elegance and personality to this wine.

Chardonnay 100% from Las Violetas region.
During the last 30 years Bodegas Carrau had identified the best mature Chardonnay was obtained in the ideal conditions for this variety that we have in Las Violetas, where we reach full body whites and great concentration of floral flavors for this variety.
You enjoy a slight pale yellow color with a viscous aspect in the glass.
It has intense, delicate fruit aromas of melon and mango with a very delicate touch of toasted almonds and honey. The flavors are complex, dry, and with lively acid that gives freshness and length on the palate.

ORIGIN: the wine is named after the locality “Bocara” in the hills around Selva di Montebello, in the heart of the classic wine-rpoducing area, Gambellara.

TIME OF HARVESTING: from mid October, with grape selection and hand-picking
WINEMAKING PROCESS: soft-crushing of the grapes at low temperatures; fermentation takes place in stainless steel vats at a thermostatically controlled temperature of 18° C/64.4° F.
MATURING AND AGEING: the wine remains in contact with its own natural yeasts in stainless steel tanks for at least 3 months before being bottled and stored to age for a further 3 months.
ALCOHOL CONTENT: 12% vol.
TOTAL ACIDITY: 5.8 g/L
TASTING NOTES: brilliant straw yellow color with brilliant greenish tints. Has a flowery, fruity nose with a touch of fresh fruit. Has a fresh, elegant, sapid flavour, which is well-balanced, long flavour on the palate.
SERVING TEMPERATURE: 8-10° C/46.4-50° F
SERVING SUGGESTIONS: excellent served on its own or as an aperitif. Perfect with rice or pasta dishes featuring freshwater fish or seafood. Recommended with vegetable soups or creams and also with pea or asparagus risottos.

BEBE WHITE has the perfect balance between the pleasant acidity of the Macabeo grapes and the distinct sweet floral aroma of the Moscatel.

Grapes: 35% Merlot, 30% Iron Servadou, 25% Syrah, 10% Cabernet
Dress sustained a deep, bright red with violet hues.
Complex and powerful nose of ripe red fruit (raspberry currant), spices and liquorice.
On the palate, the attack is fresh and lively. This wine is beautifully balanced tannins / fruit begins to express themselves.

Purple color; spice box, violets, black currant; layered fruit, smooth texture, will evolve.
Notes: Elegant, refined, complex and well balanced.
Color: Shady cherry red, with ciolaceous tints.
Aroma: Intense, spicy, with touches of black pepper.
Flavour: Spicy, profound and unctuous with persistent tannin. Long and important end in mouth.
