This wine is produced in eastern Veneto using 100% Pinot Grigio grapes. The grapes are harvested by hand in the early morning hours of the day. They then go through a soft pressing and are fermented with selected yeasts at a controlled temperature of 59-64 degrees F. The wine is aged in stainless steel tanks for 3-5 months and then in bottles for another 2-3 months.
This wine has a strong straw yellow color with an intense aroma and notes of nutmeg, peach, ripened apple and citrus. It has a dry and elegant taste, with strong hints of orange peel. It is remarkably sapid, long and harmonic.

Soil: The Domain is located in the heart of an abundant «garrigue» nearby the Mediterranean shore. The soils are mainly limestone with some sandstone, red clay and shale. Mediterranean climate with strong sea influence.
Grapes: Organic Syrah and Mourvèdre.
Harvest: Mechanical harvest.
Yield: 40 hl/ha
Vinification: Direct pressing and low temperature fermentation in stainless steel tank. Maturation on the lees.
Alcohol: 12,5 %
Tasting: This blend of Syrah and Mourvèdre rosé, light and round, presents aromas of roses, red fruits, and strawberry candy. Ideal for an aperitif, or to serve with charcuterie or grilled meats.
7 to 10 days at 28ºC in stainless steel tanks. Once the vats are full, the grapes undergo a maceration
before the alcoholic fermentation takes place. This process takes 30 to 40 days.
Malolactic Fermentation: 100%
Aging : 60% in French oak barrels during 12 months.
TASTING NOTES :
“For a cool vintage with plenty of challenges, the wine reached 15% alcohol, so don’t expect any green aromas or diluted flavors here. The nose is a powerful combination of dark plums, espresso coffee, Belgian chocolate and shy hints of red cherries with a full-bodied palate and abundant, fine-grained tannins, moderate acidity and good length, no doubt lifted by the alcohol. This is a big, ripe blend, slightly international, in need of some bottle aging. 42,000 bottles were produced in 2011. Drink 2015-2021.” (91 pts, Wine Spectator, 04/2014). LuisGutierrez.
Nobody knows from where the name Cagnina comes, but this wine has been made since the 13th century exclusively in the Emilia Romgna Region, just south of Venice, in Italy.

We will be celebrating our spirit friends this Halloween season with our Annual Ghostly Gala with extended hours. We have experienced a ghostly presence at our location, some during our wine tastings and by the staff on regular occasions, perhaps our spirit friend will make himself know to us again at our Gala. We will try to reach out to the spirits using a EMF tool to communicate with a group at the wine table starting at 9:00pm after last call. We also have some new professional paranormal tools to try out this year.
Costume attire is encouraged so get out your best Halloween costumes and head out to the Ghostly Gala. Don't miss out on getting a Past Life Reading and a palm reading again this year.
