Elaboration: Fermentation and maceration with their skins for 12 days in stainless steel tanks with temperature control. Aged in Allier oak barrels and aged for 12 months in the bottle.
Tasting note: Dark cherry color, high layer and thick slightly tinted tear. Our main goal is to produce wines with an extreme personality in an area where we think that it is very unique to grow grapes and make very interesting wines.
The project was born in 2009 with the vision of producing great wines in a remote and surprising region. Several varieties are very well adapted to the climate, the soils and the altitude of this region of Spain, making it possible to produce wines with character and a definite sense of place.
PADULES- THE REGION OF IGP RIBERA DEL ANDARAX
Padules, is the village where Pagos de Indalia is located, it is nestled on the Andarax creek between Sierra Nevada and Sierra Gador. This landscape, with big ravines and big slopes, forces us to use mules in many of our vineyards where you cannot use machines and you have to travel back to the old times to take care of the grapes.
The vineyards are calcareous in the area of the Andarax creek and amazing slate soils closer to Sierra Nevada, in the highest vineyards, where elevations top 3300 feet over sea level.

Our philosophy is to preserve the environment of the region. All the vineyards that we own are certified by the government of Andalucia with the stamp of organic agriculture.
VARIETAL:50% Syrah / 50% Temp. The Syrah has been very well adapted to the calcareous soils that we have around Padules. The Tempranillo
Is in the highest altitudes and grown in very dry soils. Those vines are alive just with the humidity of the Alborán sea mist. This particular microclimate combined with the slate soils and with a huge difference in temperature between day/night, allows us to produce wines with a mineral character that are very age worthy.We produced this wine in collaboration with Gretchen Thomas, Barcelona’s Corporate DirectorofBeverage. Intense ruby red color with purple reflections.
On the nose, red fruit, particularly raspberry and strawberry).
On the palate, fresh and very fine tannins that give elegance and personality to this wine.
A refreshingly crisp white wine made from Cortese, the prestigious grape used to make Gavi di Gavi. This Cortese is treated only with stainless steel, giving it a clean fresh taste and allowing the fruit and mineral characteristics of the grape to shine through.
The Cortese is an excellent pair for light hors d’oeuvres, pasta or risotto with green herbs, and seafood.
Harvest : Manual in boxes of 12 kg at the end of February 2015.

PRODUCTION
Production : 11.000 bottles
Wine-making : Direct press Rosé. Maceration with the skin during 6 hours in the press. Alcoholic fermentation in stainless steel tank during 30 days at low temperature (60ºF). Cold stabilization (40 ºF) during 15 days. Filtered and bottled on at the end of March 2014.
The wine has a light, attractive and delicate pink salmon color. Its nose is intense and complex with fresh plum and floral notes. Very refreshing in the mouth with a crisp natural acidity, tasty and with a long and delicate finish.
Ancilla is a rustic and raw expression of Montepulciano with a point of dried apple skin followed by bright cherry and raspberry. The mouthfeel is thick and chewy with bright acidity on the close.
Domaine de La Fontaine has been passed down from father to son for 5 generations – over 100 years – as has the knowledge & passion for their soil & their wines.
The property is on difficult clay soils in the Fins Bois region of the Cognac Appellation.
A dessert or aperitif wine, made from a blend of lightly-fermented grape must and Cognac. In 1589, a wine maker accidentally added grape must into a barrel that he believed was empty but in fact contained cognac. Two years later it was unearthed and hence Pineau was born. The resulting drink is between 16 and 22% ABV. Pineau des Charentes should be served chilled (8-10°C) in a tulip-shaped glass such as a sherry glass. The taper of this type of glass better enhances the aroma of the wine. Pineau des Charentes does not benefit from ageing. However, storing unopened bottles away from sources of light will do no harm to the wine, although bottles should be stored upright to reduce the exposed surface area. Once opened, Pineau des Charentes will keep for some time in the fridge.
White Pineau:
A result of blends of several Pineau's ranging from 3 to 5 years old. It is made from "Ugni Blanc" grapes which are also used to make Cognac.
Serving Hints:
Pineau should be drunk slightly chilled after meals.
